Easy Meal Idea: Breakfast Chia Seed Pudding

Continuing on with the vegan breakfast ideas, we have a Chia Seed Pudding Recipe.

Chia seed pudding? What's the deal with that? When you soak chia seeds they turn into a jelly which makes for a great vegan pudding. Why not have it for breakfast since you can add mixed fruit. Chia seeds also have lots of nutrients which will help you start your day off right. It doesn't take a lot of prep and is another option if oatmeal is not your thing. It almost has a yogurt type consistency to it so if you are looking for a yogurt replacement this will do the trick.


Ingredients:

Chia Seeds - 1/4 to 1/3 cup chia seeds (you can add more if you'd like)
Almond Milk - 2 cups
Cinnamon - (1/4 tsp)
Sweetener to taste
Fruit (handful)
Berries (handful)


Preparation:

Combine Chia seeds, almond milk, cinnamon and sweetener. Pour liquid into 2 mugs for 2 servings (or keep in one bowl) and place in the fridge until chia seeds become jelly-like. You can let it soak overnight and eat it in the morning. When you are ready to eat them, mix in fruit for taste.
