Wanderlust Chickpea Salad Sandwiches

Welcome to the Wanderlust Vegans Kitchen! We will be providing you with simple, easy recipes every Friday for healthy meals on your travels.

Today we will be making Chickpea Salad Sandwiches.

(Four Sandwiches)

Ingredients:

One can of Chickpeas
1/2 cup chopped Cucumber
1/4 cup chopped Carrots
1/4 cup chopped Peppers
2 tablespoons of diced Onion
1 teaspoon minced Garlic
3 tablespoons of Vegan Mayo
Salt and Pepper to taste.
Whole Wheat Bread

Directions:

Chop Cucumber, Carrot, Pepper, Onion and mince the garlic

In a large  bowl combine Chickpeas, Cucumber, Carrots, Peppers, Onion, Garlic, and Mayo

Stir or mash together

Let chill.

Spoon mixture onto bread, add salt and pepper as desired.

Enjoy!

(For those of you who want to just make a salad and not a sandwich, try adding 2 large potatoes to the mixture!) 2 large potatoes cubed and boiled. - let cool before adding to the mix.

  1. Oh yum! I've always wanted to make a chickpea salad sandwich I like the idea of it and I just recently found Indian black salt it has a sulfurous taste so this recipe can really mimic an egg salad sandwich which will impress my newly vegan husband!

  2. I love chickpea salad sandwiches! They're fab for packed lunches and picnics, aren't they? When we're on long road trips or flights, I use tortilla wraps instead of bread though, as I find they hold up better.

    I mash my chickpeas with my own veganaise mixed with a little ketchup and chipotle Tabasco, then mix in spring onion, red pepper, and some parsley . It's heavenly, I tell you! I also use this mix to make lettuce wraps, sometimes adding chopped sun-dried tomatoes too. So fab when you want something filling but not too heavy.

    Gosh, my tummy is really rumbling now! LOL!
